Restaurants can earn up to 12 spoons; one spoon for each of the following criteria that are met.
- Serves mostly fresh food prepared on site from scratch.
- Offers some local, organic, or wild-caught food.
- Offers some pastured meat, eggs, or dairy.
- Serves some organ meats (liver, pate, sweetbreads, etc.).
- Uses natural fats for cooking (butter, lard, tallow, duck fat, olive oil, etc.).
- Makes bone broths/stocks for soups, stews, gravies, sauces.
- Makes own seasoning mixes (no MSG or flavoring packets).
- Makes own salad dressings using olive oil or cold-pressed sesame oil.
- Offers genuine sourdough bread.
- Offers lacto-fermented beverages such as kombucha or kvass.
- Offers lacto-fermented condiments.
- Serves naturally sweetened desserts (using raw honey, maple syrup, date sugar, etc.).
