exley's is an excellent and delicious place to eat. Nearly everything is made from scratch except for mayonnaise and ketchup. They do their best to source as much as they can from local farms as possible. All fish served is locally caught and never frozen. The seasoning blends, salad dressings, and vinaigrettes are made in house. Although they don't serve sourdough bread, they have Japanese milk bread made from scratch at the restaurant. Some condiments are fermented. They ferment their hot sauces in house and the kimchi is fermented too.
