Comments: Most of the food is made from scratch. They use locally produced ricotta cheese, but I don't know of any other local products, and the ricotta is not organic. The shrimp is wild-caught, possibly other seafood is as well. The only organ meat that I know they serve is tripe. They regularly have huge pots of bone broth simmering in the prep rooms. Most of the house-made dressings (or the purchased dressings) are unfortunately made with soybean oil (and sugar), but I believe the oil-and-vinegar option is actually olive oil. There is plenty here to be cautious about, but they certainly deserve at least a couple of spoons. I have worked there in food preparation for just over a year, though just part time, mainly on weekends. Other things to ask about and look out for are sugar content and microwave use. When I request my employee meal, I nearly always just get grilled chicken and vegetables, and take some real butter from the server station to melt over the food myself.[end character limit]
