Signature's offers two dining options: formal dining at Signature's Restaurant and casual dining at The Grill at Signature's. Situated on the grounds of The Bridges golf course, the restaurant offers a beautiful view of the surrounding bluffland, lovely gardens, and a pleasant atmosphere in addition to good food made from high-quality ingredients.

Rating Criteria

1. From Scratch: Serves mostly (i.e., more than half of the menu) fresh food, prepared from scratch. Does NOT rely primarily on kits or prepared/partially prepared foods from commercial food services.

Comments: Signature's only uses pre-made food for a few items they cater. Otherwise, all food is made in-house.
2. Local/Organic: Offers at least some locally sourced and/or organically produced food and/or wild-caught seafood.

Comments: Most meats are locally sourced, and walleye is from Minnesota when available. Mush produce is sourced locally, and mushrooms, fiddlehead ferns, and ramps are from certified local foragers/farmers when in season. Wild rice is from Bemidjii, MN. The restaurant has two chef’s gardens on the property, where they organically grow tomatoes, squash, peppers, herbs, cucumbers, kale, strawberries, and edible flowers.
3. Pastured: Offers at least some pastured animal foods.

Comments: Many meats, including duck, chicken, and lamb, are free range.
4. Organs: Offers some dishes made with organ meats (liver/paté, sweetbreads, heart, kidney, brains, etc.).

5. Cooking Fats: Cooks (sautés) in natural fats such as butter, lard, tallow, duck fat, coconut oil, or olive oil; uses lard, duck fat, or tallow for frying.

of duck confit and poaching our fingerling potatoes. Butter is used for starches and vegetables and blended olive oil for cooking. However, soybean oil is used for frying.
6. Bone Broth: Makes own bone broths/stocks for use in soups, stews, gravies, and sauces (does NOT use canned broth or powdered soup bases).

Comments: Stocks are house-made from the carcasses/bones of chicken and veal. Vegetable stock and veal demi glace are also made in-house.
7. Seasonings: Makes most of its own seasoning mixes (does NOT use flavoring packets or MSG).
