I have followed Jessie since his beginnings at the downtown Austin Farmer's Market where his creations are sorely missed. Jessie put a great deal of forethought into what he would serve in his brick and mortar restaurant and we had a few discussions about the types of fat that would be used...in fact, initially he was considering the use of canola oil. After supplying him with the information that Sally Fallon had researched and published on that oil he determined that it would not be used in his establishment. It has been my experience that this is one of very few restaurants where the ethics and integrity of what they serve is solid. It takes a great deal more effort to do what Jessie has done and I hope others will support him and let him know that you appreciate all that he does to maintain this level of quality and service.
