"Local is possible."

Our goal is to operate a bakery that features locally made breads, sweets and other goodies using only locally sourced (within 100 miles) ingredients.

We only use delicious local honey as a sweetener. We source over half of all of our ingredient needs directly from local farmers. Even our grains are locally sourced, and you'll love how many incredible varieties there are!

We feel that by staying local, we can make a big difference in our economy as well as our environment.

Rating Criteria

1. From Scratch: Serves mostly (i.e., more than half of the menu) fresh food, prepared from scratch. Does NOT rely primarily on kits or prepared/partially prepared foods from commercial food services.

2. Local/Organic: Offers at least some locally sourced and/or organically produced food and/or wild-caught seafood.

Comments: Everything comes from within a 100 mile radius of the restaurant!
3. Pastured: Offers at least some pastured animal foods.

4. Organs: Offers some dishes made with organ meats (liver/paté, sweetbreads, heart, kidney, brains, etc.).

Comments: They have offered some organ meat dishes in the past and may have them again on occasion. Ask if you'd like to see more organ means on the menu!
5. Cooking Fats: Cooks (sautés) in natural fats such as butter, lard, tallow, duck fat, coconut oil, or olive oil; uses lard, duck fat, or tallow for frying.
