Burdick's Restaurant is a laid-back, mostly made from scratch, local farm-friendly eating establishment. They purchase whole animals and cut them up themselves thereby using all edible parts. On-premise broth is made from fish, chicken, veal, lamb and lobster. Sauces and salad dressings are created in their kitchen from their own broth and extra-virgin olive oil. They serve locally made, wood-fired sourdough breads as well as ethically treated meats. Gluten-free options are available. While they use a lot of butter and duck fat for frying, they do also use some soy and canola oil. Lacto-fermented condiments are not served as it is illegal to do so in the state of New Hampshire.
