Quiessence at The Farm delivers a truly “farm-to-table” experience using locally sourced produce, meat and wine, to create a refined rustic menu. Tucked away in the Farm at South Mountain, Quiessence delivers farm-focused and uncomplicated cuisine; a delight of cheeses, artisan breads, handcrafted pastas and local produce. Unique indoor and award-winning outdoor dining. The American and Arizonan wine list is accompanied by an international reserve list designed to pair with the cuisine.

Ask your server about the history of the restaurant. Weather permitting, sit outside. And watch your step walking over to the bathroom.

Rating Criteria

1. From Scratch: Serves mostly (i.e., more than half of the menu) fresh food, prepared from scratch. Does NOT rely primarily on kits or prepared/partially prepared foods from commercial food services.

Comments: All menu items are made from scratch. Every night the menu changes depending on what the chef prepares. The food is all locally grown whether on their farm or local farms. The food is fresh and you can taste it.
2. Local/Organic: Offers at least some locally sourced and/or organically produced food and/or wild-caught seafood.

Comments: The words "Farm to Table Dining", get thrown around too much, as every gastropub loves to use them. But if you really want to enjoy a true farm to table experience then Quiessence is your restaurant. Why? Because it's actually on a farm. Most likely your server will be able to tell you and point to exactly where each fruit and vegetable was picked.
3. Pastured: Offers at least some pastured animal foods.

Comments: All meats are locally sourced grass-fed. Most of the poultry is from the farm itself (all of their poultry is pastured).
4. Organs: Offers some dishes made with organ meats (liver/paté, sweetbreads, heart, kidney, brains, etc.).

Comments: The foie gras and charcuterie selections are all house made from poultry raised on the farm or locally raised gras-fed pastured meats.
5. Cooking Fats: Cooks (sautés) in natural fats such as butter, lard, tallow, duck fat, coconut oil, or olive oil; uses lard, duck fat, or tallow for frying.

Comments: Butter, lard, and duck fat are used for cooking. Local olive oil is used for salad dressings.
6. Bone Broth: Makes own bone broths/stocks for use in soups, stews, gravies, and sauces (does NOT use canned broth or powdered soup bases).

Comments: They make all their own bone broth; much of it from poultry raised on the farm.
7. Seasonings: Makes most of its own seasoning mixes (does NOT use flavoring packets or MSG).
